Nutrient Brief: Poppin Peppers


The bell pepper comes in an assortment of colors and varieties.  The most common is green, however, red and yellow are also very popular and even sweeter.


Bell peppers are available year round and are abundant in vitamin C.  One small green bell pepper will yield 60mg of Vitamin C, which meets your minimum daily requirement.  However, the red and yellow peppers have as much as 135mg or more.  Colors often define what type of nutrients are in a vegetable.  For example, red peppers also have higher amounts of vitamin A compared to the green and yellow bell peppers.  Yellow has the highest vitamin C content.

Bell peppers are also an excellent source of dietary fiber.  I love to eat them raw (by itself), on salads, and even on my sandwiches.  However, another popular way to prepare them is roast them which helps maintain their nutrients. 


Ideally, you should buy organic bell peppers.  Reason: bell peppers are among the top vegetables subjected to pesticide residue.  So, if you don't buy organic, wash them very well.
